This muesli breakfast balances starchy carbs, with protein and a good portion of low glycaemic fruit. The protein comes in the form of the nuts, seeds and milk or yoghurt.
Although it may not seem a huge quantity, as it is so dense with fibre and nutrients, you will feel satisfied throughout the morning until lunch time.
Prep time: Both the breakfast and the muesli will take minutes to assemble.
Ingredients
- Muesli, store in an air tight container for 2 -3 weeks. Keep in the fridge
- Equal measures of a grain and a ready made nut and seed mix
- 2 cups of either oats, millet flakes buckwheat flakes or mix of all three
- 2 cups a nut/seed mix.
For the breakfast:
Serves 1
- ½ cup muesli
- 1 cup of berries
- ½ Apple chopped
- 1 Tablespoon of Flax or Hemp oil
- Yoghurt or Almond milk
Method
- Add half a cup of muesli to a bowl
- Stir in the berries
- Pour over the oil
- Add milk or yoghurt
