This muesli breakfast balances starchy carbs, with protein and a good portion of low glycaemic fruit. The protein comes in the form of the nuts, seeds and milk or yoghurt.

Although it may not seem a huge quantity, as it is so dense with fibre and nutrients, you will feel satisfied throughout the morning until lunch time.

Prep time: Both the breakfast and the muesli will take minutes to assemble.
Ingredients

  • Muesli, store in an air tight container for 2 -3 weeks. Keep in the fridge
  • Equal measures of a grain and a ready made nut and seed mix
    • 2 cups of either oats, millet flakes buckwheat flakes or mix of all three
    • 2 cups a nut/seed mix.

For the breakfast:
Serves 1

  • ½ cup muesli
  • 1 cup of berries
  • ½ Apple chopped
  • 1 Tablespoon of Flax or Hemp oil
  • Yoghurt or Almond milk
Method

  1. Add half a cup of muesli to a bowl
  2. Stir in the berries
  3. Pour over the oil
  4. Add milk or yoghurt
