Pre heat oven temperature; 200 C/ 400 F
Roasted sweet potatoes

- Sweet potatoes (see above guidance on amounts.)
- 2 tablespoons of rapeseed oil or 1 tablespoon Coconut oil/butter
Method
- Scrub the sweet potatoes well. No need to peel.
- Cut into approximately 2 x 1 inch/ 5 x 2.5 cms chunks
- Drop them into a large bowl mix in the olive oil
- Or if using coconut butter, scoop a spoonful onto the baking dish and melt first. Pour onto the sweet potatoes, shake and return to the baking sheet.
- Bake for around 15 – 20 minutes until soft.
Timing will depend on the on the size of the sweet potatoes
