Beans on toast (apart from any added sugar) is regarded a healthy option. Our adaptation makes this simple standby it really healthy.

There is heaps of fibre and protein which helps blood sugar balance and bowel function. The veg offers additional nutrition and supportive phytonutrients. It is also a great way to encourage veggie-phobes to try something different whilst eating a well-recognised meal.

Cook time: Around 10 minutes.
Ingredients
Serves 2

  • 1 Tablespoon Unrefined rapeseed oil
  • 1 Red Onion, sliced
  • 2 Cloves Garlic, crushed
  • 1 Red Pepper, chopped
  • 1 Courgette, chopped
  • Tamari (or Soy sauce), 1 ½ Tablespoons
  • 1 Dessertspoon Hot Pepper Sauce
  • 1 Large can of Baked Beans, opened (!)

Method

  1. Use a large open pan with a lid warm a little oil and add the vegetables.
  2. Sauté gently for 5 minutes
  3. Add the Tamari, Hot Pepper Sauce and baked beans.
  4. Cook for another 5 – 10 minutes (we cooked it all for 5)
  5. Serve with granary toast drizzled with a little extra virgin olive oil.
