This is so easy; it almost feels like a cheat to call it a recipe!

You can use this on salad leaves, warm potatoes or even as a marinade for fish for ½ hour before you bake it.

Prep time : 5 minutes
Ingredients

  • 60 ml extra virgin olive oil
  • Juice from ½ a lemon
  • 1 clove of garlic
Method

  1. Whisk the oil and lemon together.
  2. Crush the garlic into the mixture.
  3. Transfer into a screw top jar and give it a good shake.
  4. Add a little black pepper.

Play with the amounts until you are happy with the result, i.e. more lemony or more garlicky.
It you can make it ahead of when you want it, then the flavour will develop.
