When trying to move toward healthier eating options, it’s great to introduce variations of old favourites. 

This is another take on mayonnaise. Essentially can be used as a light spread or a dressing. Something to dollop on the plate, instead of egg based mayo.

Keep it in a jar in the fridge it should be okay for a day or so. Really fresh courgettes do not need added water.

Prep time: It’s all about a bit of blending, so around 5 minutes or so.
Cook time: None!

Ingredients 

1 Courgette, peeled and chopped

1 ½ – 2 Tablespoons of Extra Virgin Olive Oil

1 clove of garlic

1 Teaspoon of Hot Pepper Sauce

Water, a little to obtain right consistency IF REQUIRED. If the courgettes are very fresh then you may not need it.

Method 

  1. Put the courgette and 1 tablespoon of oil in a small blender and blend until smooth. Add a little more at a time being careful not to overdo it and make it runny.
  2. Add the chilli sauce and garlic, and blend again
  3. Add some salt and pepper to taste
