This is a well loved combo. This dairy free recipe can be put together from simple ingredients to fabulous effect. If you are wondering what to do with the dried coconut hiding in the back of your cupboard, this is a great idea.
The finished ‘ice’ has texture, crunch and tastes delicious.
Prep time: 2 hours (for soaking the coconut, it may take less time)

Ingredients
- 100 gms of desiccated (dried) coconut
- 400 mls of fresh water
- 100 gmsof dark chocolate (preferably 70% or more coco content) broken into pieces.
- 3 dessertspoons of agave syrup
- Small tin of coconut cream
Method
- Soak the coconut until all the water has disappeared. If you have time to leave it overnight, great but if not, a couple of hours will do. Warm water will speed up the process.
- Blend the soaked coconut to a pulp.
- Add the chocolate peices and blend again.
- Add 2 spoons of the agave syrup, blend and taste. Add more syrup if required. This will depend on what chocolate you use and your taste buds, less is more!
- Add 2 tablespoons of coconut cream and blend in.
- Pour into a container and freeze. After an hour give it a good stir and freeze until set.
- For a dinner party put into individual pots and decorate with shaving of dark chocolate.
