We should call this the skin booster salad! The beneficial oils in the walnuts and the avocado are understood to be particularly helpful in terms of skin health. There has also recently been some interesting research around walnuts health benefits in particular. They are understood to contain powerful antioxidants which are more potent than vitamin E.

Together with avocado nutrition, a salad like this is very supportive for heart health and as well skin integrity. The sheep cheese dressing replaces commonly used mayonnaise but tastes just as good and satisfying. Whilst not a low fat cheese 45% of the fatty acids are mono or polyunsaturated. It can generally be better tolerated by those who cannot eat cows cheese. It is also higher in protein and calcium plus a number of B vitamins than other milks.

If you have an existing heart or cholesterol issue replace the dressing with a lovely sprinkle of walnut oil, a fruit vinegar and a squeeze of lemon juice.

Cook time: None what so ever!

Ingredients Serves 2

Dressing
100 gms High Weald Dairy’s Slipcote Sheep’s Herb and Garlic soft cheese. It is similar (but much nicer we think!) to Boursin soft cheese.
A tsp of lemon juice
Water

For the Salad
1 Large Bag of mixed salad leaves, washed and dried
2 Avocados, 1 per person, peeled and sliced
2 Handfuls of fresh walnut halves
1 Red Pepper, deseeded and sliced
3 Spring onions finely sliced
Punnet of Sprouted seeds; any variety i.e. Broccoli and Alfalfa or Fenugreek etc. Well washed and dried

Method

  1. Firstly make the dressing: Put the soft cheese in a small blender. Add enough water to turn it into a thick-ish liquid and blend; around 2 tablespoons.
  2. Add more liquid, a tablespoon at a time until you have the consistency you desire then add the lemon juice. You can have it as thin or thick as you like.
  3. Season if you need to, you may not as the cheese is very flavoursome.
  4. Then wash the leaves and place on the plates
  5. Layer the other veg on top.
  6. Sprinkle the walnuts over the salad
  7. Drizzle the dressing over just before serving.
